So, me and my husband are really trying to cook at home more, now don’t get crazy, I am talking 3 or 4 nights a week, but that is better than we used to do. We like quick and easy meals that taste great. I will share some of my favorites with you, but please share with me as well.
Mexican Cornbread- fast, easy and delish!
Start with 1 pound ground turkey or beef (whichever you prefer). Season and cook however you would like. Be sure to use taco seasoning.
Then, Put in a bake pan, I use a small 8×8 since it is just 2 of us, but you can add more and make more however you chose. Measurements do not need to be exact.
Then, add a layer of cream corn.
Add a layer of shredded cheese.
Then, complete by adding a layer of Jiffy cornbread mix.
Bake at 350 degrees until corn bread is complete.
Serve.

Just the name “banana chocolate chip cake” makes our mouths water. This yummy recipe from Allergy Free Desserts is the perfect treat to have with your morning coffee. We guarantee this Banana Chocolate Chip Cake won’t make it to the end of the week.
Serves: 8 to 10
Ingredients
1?4 cup gluten-free vanilla rice milk
1?4 cup cider vinegar
6 tablespoons water
2 tablespoons ground flaxseed meal
1 1?4 cups Betsy’s Baking Mix (see page 88)
1?2 teaspoon baking powder
1?2 teaspoon baking soda
1?2 teaspoon xanthan gum
1?4 teaspoon salt
1 cup granulated sugar
6 tablespoons organic palm fruit oil shortening
2 medium bananas, peeled and mashed (about 3?4 cup)
1 teaspoon vanilla extract
1 cup gluten-, soy-, dairy-, egg-,and nut-free semisweet chocolate chips
1 recipe Flower Frosting
Chocolate Crinkles
1/2 cup vegetable oil
4 oz unsweetened baking chocolate, melted, cooled
2 cups granulated sugar
2 teaspoons vanilla
4 eggs
2 cups Gold Medal® all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup powdered sugar
1.In large bowl, mix oil, chocolate, granulated sugar and vanilla. Stir in eggs, one at a time. Stir in flour, baking powder and salt. Cover; refrigerate at least 3 hours.
2.Heat oven to 350°F. Grease cookie sheet with shortening or cooking spray.
3.Drop dough by teaspoonfuls into powdered sugar; roll around to coat and shape into balls. Place about 2 inches apart on cookie sheets.
4.Bake 10 to 12 minutes or until almost no imprint remains when touched lightly in center. Immediately remove from cookie sheets to cooling racks.
